ผศ.ดร.สายสุนีย์ จับโจร ผู้อำนวยการสำนักคอมพิวเตอร์ จัดการอบรม “โครงการยกระดับรายได้กลุ่มเกษตรกรผู้เลี้ยงโคขุนด้วยการแปรรูปชิ้นส่วนรองและชิ้นส่วนที่เหลือจากการตัดแต่ง” 
โดยมีวิทยากรจาก ศผส.มหาสารคาม จำนวน 4 ท่าน จัดขึ้นเมื่อ 
วันอังคารที่ 4 พฤศจิกายน 2568 ณ กลุ่มวิสาหกิจชุมชนผู้เลี้ยงโคเนื้อคุณภาพบ้านดอน “งัวดำบ้านดอน” ต.พันชนะ อ.ด่านขุนทด จ.นครราชสีมา 
กิจกรรมการฝึกอบรม ประกอบด้วย 
การบรรยายหัวข้อสำคัญ ได้แก่ 
การพัฒนาผลิตภัณฑ์ 
ต้นทุนการผลิตและการบรรจุภัณฑ์ 
แนวทางการทำการตลาด 
การทดสอบชิมและวิจารณ์ผลผลิตภัณฑ์ พร้อมด้วยกิจกรรม ฝึกปฏิบัติการแปรรูปผลิตภัณฑ์เนื้อแผ่นปรุงรส เนื้อแดดเดียว และไส้กรอกอีสาน เพื่อเสริมทักษะให้กับเกษตรกรสามารถนำความรู้ไปใช้ได้จริงในพื้นที่
การฝึกอบรมในครั้งนี้ มีเป้าหมายเพื่อเสริมสร้างความรู้ความเข้าใจแก่เกษตรกรด้านการบริหารจัดการชิ้นส่วนโคขุนและการแปรรูปผลิตภัณฑ์ ให้สามารถพัฒนาอาชีพ สร้างมูลค่าเพิ่มให้กับ โคขุน นำไปสู่การเพิ่มรายได้ และสร้างความยั่งยืนให้กับชุมชนเกษตรกรต่อไป

Assistant Prof. Dr. Saisunee Jabjone, Director of the Computer Center, organized a training program entitled “Income Enhancement Project for Beef Cattle Farmers through the Processing of Secondary Cuts and Trimming By-products.”
The training was conducted by four experts from the Mahasarakham Beef Cattle Research and Development Center on Tuesday, 4 November 2025, at the Ban Don Quality Beef Cattle Community Enterprise Group “Ngua Dam Ban Don,” Phan Chana Subdistrict, Dan Khun Thot District, Nakhon Ratchasima Province.
The training activities comprised key lectures on
- Product development
- Production costs and packaging
- Marketing approaches
- Product tasting and evaluation
In addition, participants engaged in hands-on practice sessions, including the processing of value-added beef products such as seasoned beef sheets, sun-dried beef, and Northeastern-style sausages (Sai Krok Isan), aimed at enhancing farmers’ practical skills and enabling them to apply the knowledge within their communities.
The primary objective of this training was to strengthen farmers’ knowledge and understanding of beef cattle by-product management and value-added processing. This initiative seeks to support career development, increase the value of beef cattle products, boost household income, and foster long-term sustainability for the local farming community.
